OLINE'S RECIPES

Redneck Quiche

(makes 20 individual servings)

  • *1 lb. ground round
  • 1/2 cup finely chopped onion
  • 1 clove garlic minced
  • 1 can Mexican seasoned diced tomatoes
  • 1 cup shredded cheese (any cheese will work but we like half pepperjack and half cheddar)
  • 1 can refrigerated biscuits (southern or buttermilk style are best)

Preheat oven to 375. Heat 1 teaspoon olive oil in skillet and saute onions and garlic until tender. Add ground chuck and brown. Drain and return to skillet with diced tomatoes. Simmer until most of liquid is absorbed. Empty into medium size bowl and add cheese. Remove biscuits from can and cut each biscuit in half. Using a rolling pin roll each half until about 6 inches in diameter. Place flattened biscuit half in muffin pan that has been lightly sprayed with Pam pressing the dough up the sides of the cup like a pie crust. Fill each muffin cup with spoon of meat and cheese mixture and bake for 12 to 15 minutes or until dough is lightly brown.

*Good quality bulk sausage can be substituted for the ground round.

Mississippi Mud Cake

CAKE:

  • 2 sticks melted butter
  • One half cup cocoa
  • 4 eggs, slightly beaten
  • 2 cups sugar
  • One and one half cup plain flour
  • One and one half cup pecans, chopped
  • 1 Teaspoon vanilla
  • One half teaspoon salt

TOPPING:

  • Miniature marshmallows
  • 1 Box sifted powdered sugar
  • One half cup milk
  • One third cup cocoa
  • One stick butter, melted

Mix together butter and cocoa; add eggs and sugar to butter and cocoa mixture. Blend flour, pecans, vanilla and salt into the above; bake 35 minutes at 350 degrees in a greased 9 x 113 oblong pan. Cover with miniature marshmallows and place in oven to melt marshmallows. Combine powered sugar, one half cup milk, one third cup cocoa and 1 stick butter and mix until smooth, then spread on cake.


LISA'S RECIPES

Lisa’s Buffalo Wing Chicken Dip

  • 5 large chicken breast
  • 1-12oz bottle of mild buffalo wing sauce
  • 1-8oz package of cream cheese
  • 3/4 cup of ranch dressing
  • 1-8oz package of fiesta blend shredded cheese

Boil chicken and shred into pieces. Mix wing sauce, ranch dressing, and chicken in a large bowl. Spread the cream cheese evenly on the bottom of a 9x13 ungreased casserole dish. Spread one half of the mixture evenly on over the cream cheese and cover with 4oz of cheese. Repeat with another layer of mixture and cheese. Bake at 350 degrees for 30 minutes. Serve hot with chips.


MCALL'S RECIPES

Mexican Seven Layer Dip

  • 1 can of refried beans
  • 1 pack of taco seasoning
  • 1 container (16 ounces) of sour cream
  • 1 can of salsa
  • 1 package of shredded cheese
  • 1 bag of shredded lettuce
  • ¾ cup diced scallions
  • ¾ cup of sliced black olives

Directions
Mix the refried beans and taco seasoning together and spread evenly into a medium size shallow serving dish. Cover evenly with sour cream and then salsa. Sprinkle the lettuce and then cheese.Top with scallions and black olives as desired

Crack Dip

  • 1 can of Green Chillies
  • 1/3 cup of Jalapenos
  • 1 cup of Mayonnaise
  • 8 ounce package of Mexican blend cheese
  • 1 cup of sour cream
  • 2 cans of Mexicorn, drained

Directions
Conbine all of the dip contents together and place in the fridge. It is suggested to make 12 hours ahead, or the day before. The longer it sits, the flavors get better. Serve with tortilla chips.

Stuffed Jalapenos

  • 12-20 Jalapeno Peppers
  • 1 package of cream cheese
  • 1-1/2 cup of shredded cheddar cheese
  • ½ Green Pepper
  • 6 strips crisp bacon, crumbled

Mix the soft cream cheese, shredded cheese, bacon, and diced green pepper into a bowl. Slice the jalapenos in half and take out seeds. Add mix to each half jalapeno. Bake at 375 for 30 minutes or until soft.


REBECCA'S RECIPES

Cheeseburger Sliders

  • 2 pounds hamburger meat
  • 2 tsp pepper
  • 2 tsp salt
  • 2 tsp garlic powder
  • 6 slices deli style pepper jack cheese
  • ½ chopped onion
  • 1 package of dinner rolls
  • 1 stick of melted butter
  • 2 Jalapeno Peppers chopped (optional)

Directions
Mix Hamburger meat, salt, pepper, and garlic powder and spread into a 9 x 12 glass casserole dish
Bake at 350 for 20 minutes
Slice the dinner rolls in half using a bread knife
When the meat is done cooking for 20 minutes, take the meat out of the casserole dish a drain access grease
Put the bottom slices of the dinner roles in the 9 x 12 pan
Add meat to dinner roles
Add Chopped onion
Add Jalapenos (optional)
Add Cheese
Add the top portion of the dinner roles
Drizzle butter on top of the roles
Bake 350 for 20 minutes
Let Cool for 5-10 minutes and SERVE!
